I tried to call in but couldn't get through. Here's what I was gonna tell the guys about squirrel: Squirrels are delicious and taste best when properly handled. Your shots have to be clean and the meat has to be handled in a way that keeps the hair off. Picking hair from squirrel meat is more tedious than counting rice. Old squirrels need to be boiled for tenderness while younger squirrels fall off the bone. I skin my squirrels underwater in a bucket. This keeps the hair away. The glands Michael was talking about are a factor only if dealing with a squirrel in the rut. I haven't had to deal with this very often. However, you gotta check and if the glands are swollen, then they need to be removed and the blade cleaned. Squirrel and dumplings are the most popular among the folk, barbecuing squirrel is a tasty altermative. Salt and pepper is really all you need. Squirrels are not sold in the State of Texas because they are a game animal. There is a season on them and you must have an applicable hunting license even to attempt taking some. The best squirrels, in my opinion, come from pecan orchards. They tend to be fatter and more tender. If anyone here is gonna be around the Lake Livingston area from now until February, holler at me and let's try to go on a hunt.
